SambucusFresh – Partnership with UTAD

Project co-promotion called SambucusFresh - financed under the European Regional Development Fund and the NSRF – National Strategic Reference System of incentives for research and technological development, I&DT projects in companies co-promotion.

 

Its main objectives:

  • ● Characterization of Sambucus nigra L clones in the region of Vale do Varosa.
  • ● Morphological and physiological characterization of chemical composition and elderberry fruit, as well as its variation during maturation.
  • ● Process optimization processing, storage (determination of the useful life of refrigerated and frozen concentrated bay berry) transport and to prevent / reduce the lactic acid production and microbial growth.

 

The goals to be achieved are:

  • ● Definition of the most productive clones of the region, to enable entry in the catalog of varieties.
  • ● Comparison of different clones in terms of quality of the end product (° Brix, acidity, dye, phenolic compounds and vitamin C)
  • ● Determination of objective parameters to define the best time to harvest the different clones.
  • ● Determination of the relevant morphological and physiological characteristics of the different clones to allow the selection of the most productive and more resistant.
  • ● Decrease in lactic acid content of the final product.
  • ● Identification of facultative anaerobic psychrotrophic microorganisms in cooling and freezing.
 
 

Apple Gold – Partnership with UTAD

“Preparation and Preservation of Frozen Apple Cubes”, under Measure 4.1 «Cooperation for Innovation» integrated into subprogram n.4 « Promotion of Knowledge and Skills development»of the Rural Development program of the Continent (PRODER).
 
Its main objectives:
 
Preparation and Preservation of Frozen Apple Cubes. AppleGold, is the implementation of the process of peeling and cutting as well as the development and optimization of a technology interface in order to prevent loss of quality , particularly due to the browning process between the operation of peel and cut the company to implement and freezing process , existing in the company, in order to increase the profitability of the production process. The implementation of a process of production of peeled apple , sliced ​​and frozen will enable the company promoting this project , increasing the profitability of the company, including its tunnel freezer , which is currently underused as it is only used during the three months year. This project also aims to value the apple product for training in the area of an industrial process that will allow the recovery of apple industry as a product of greater commercial value compared with the currently available alternative processes .
